菜蔬测酸硷之法
世有测酸硷之需,而以菜蔬为引,可得其法。择鲜翠之甘蓝,切为细碎,置于釜中,添水以煮。火宜缓,待水色渐变,如染翠碧,乃止。
漉其汁,盛于净器。此汁遇酸则色变,或赤或绯,遇硷则易色,或青或蓝。欲知物之酸硷,取其液,滴于待验之物。观其色变,便知酸硷之性。酸者,色赤如丹砂;硷者,色青若靛蓝。
以菜蔬之汁为测酸硷之具,简便且易为。于寻常人家,无需繁器,便可验物之性,实乃妙法也。
